Snail caviar (escargot caviar, white caviar, snail pearls) – is a type of caviar made of fresh or processed eggs of land snails.
Snail eggs are naturally white-colored, however, their color may vary depending on the method of processing, if any has been used. The eggs are handpicked to be of matching sizes and shapes, to ensure high quality of the product. Most commonly snail eggs are 3-4mm in diameter.
Snail caviar is a wonderful delicacy, that possesses unique earthy flavour with “woody notes”, reminiscent of mushrooms, chestnuts and alike.
